Happy Monday and Happy Cinco de Mayo! I really love this day because I am such a lover of tacos and margaritas, and more than the normal person! 🙂 In honor of Cinco de Mayo, I thought it would be fun to share a cupcake recipe I made last year for a party. This recipe is super easy! I apologize for only having one photo, I was not into photography last year as I am now!
To recreate this recipe you will need:
1 Box of Betty Crocker yellow cake mix and the ingredients needed from the box.
In place of the 1 cup of water, you will need Margarita Mix. You can use with or without alcohol. I used Jose Cuervo (original flavor) with alcohol which was already pre-made.
Preheat oven at 325
Mix your box and ingredients with your margarita mix.
Pour into your cupcake liners 1/3 full
Bake for 20 mins
While your cupcakes are cooking off- cut limes into half slices
Once your cupcakes are nice and cooled, put your frosting on, I used vanilla.
Put your half lime on the side and your drink umbrella on the other size. Don’t forget to add some green sprinkles.
These cupcakes are great for parties and BBQs. If you want to make them for Cinco de Mayo serve them with tacos, empanadas, chips & dip and some nachos! Don’t Forget the margaritas tonight too! Hope you all enjoy these! Let me know if you make them! Are any of you celebrating today?
