This past weekend I had the opportunity to attend Lucky Stars Planning’s (LSP) 1st Bridal, Prom & Sweet 16 EXPO. It was such a great experience meeting all the vendors and interacting with prospected clients. I love talking and getting to know wedding and party brands showcasing their creative and versatile styles. I made some great new friends, so stay tuned for future features!
The EXPO was located at the Majesty Loft in Montclair, New Jersey and I was honored to run LSP’s table. As a thank you, I made some homemade Pink Lemonade Cupcakes! Get the super easy recipe below and browse through some photos from the EXPO!
Pink Lemonade Cupcake: (Makes 12)
3/4 cup of butter
1 cup of sugar
1 1/2 cups of flour
1 1/2 tsp of baking powder
1/4 tsp of salt
1 cup of Minute Maid’s Pink Lemonade (add more/less to your liking)
3/4 tsp vanilla extract
3 large eggs
Red & blue food coloring
Preheat: 325//Bake: 20 mins
Directions: First, I like to add the dry ingredients, mix well, then add in wet ingredients; leave your eggs for last one at a time. For the right pink color I added a few red drops of food coloring and one drop of blue. You can do the same depending on the color you want. Next, scoop mix into cupcake liners using an ice cream scooper. To get the perfect height, use one big scoop all around, then go back with half a scoop. For decorations, I used pink sprinkles on some, along with pink straws cut in half.
