Cupcake of the Month: Brownie + Beer

This year I was set on doing a different cupcake recipe each month and I just can’t believe January flew by so fast. Before it’s over here is a “Throwback Thursday” post. I made these last year with my sister who found this recipe in a Trader Joe’s cookbook. We changed it up just a tad adding a coffee bean grinder topping (you will not be disappointed). Just a little side note: your children can absolutely devour these at no harm, the alcohol in the beer dissolves when it is cooked at high temperatures. Don’t forget these for this weekend’s game; beer + sweets + football? What else do you need?

Any Brownie Mix (16oz)
2 Eggs
1 Stick of Butter
1/3 Cup Dark Beer (Milk Stout)
Vanilla Frosting
Topping (Trader Joe’s Chocolate Coffee Bean Grinder)

Preheat @ 350

-In a small sauce pot bring to a boil beer and butter
-Add in your brownie mix and stir
-Add in your egg (make sure you do this last because you do not want your egg to cook)

-Line your cupcake trays and bake for 25 minutes
-Let cool completely and add your frosting and toppings
-Makes 12 cupcakes
