Super Bowl Snack: Bacon Wrapped Rosemary Potato Recipe

Super Bowl is coming up this weekend and whether you are throwing a party or coming as a guest, you want to eat and serve the best dishes! Here in New Jersey, we are totally loving the fact that our home state is hosting this year so I know all my fellow Jersians are going to really go all out! Here is my go to recipe for Super Bowl Sunday as well as for any party or get together you may have. I found this recipe a few years ago and it’s always been a huge hit; so give it a try!

Ingredients:
1 lb. Red Potatoes (washed, do not peel)
1 lb. Bacon (Beef or Pork)
1 Tbsp Olive Oil
Rosemary, Salt & Pepper
Toothpicks

Preheat 400 degrees…

-wash potatoes and cut into 1 inch cubes.
-add potatoes to a pot of cold water covering them completely..add 2 tsp of salt.
-boil potatoes 3 to 4 mins max, or else potatoes will be too soft and will fall apart.
-drain, season & mix with olive oil and a light covering of rosemary, salt & pepper.
-cut bacon strips into thirds (I use beef or pork, turkey bacon seems to not bake as crispy as I like my bacon to be) and wrap around each cube.
-secure with toothpick.
-line baking sheet with foil and bake for 15 minutes.
-flip onto other side and bake another 15 minutes.
-let cool and serve with your favorite dip (I love ranch dressing or sour cream)

  1. You really can’t go wrong with bacon! I prepared a similar recipe at Christmas using Club crackers (weird, I know!) instead of potato, wrapping the bacon around the outside and baking. They were awesome! I bet these are just as fantastic!
