Greek Yogurt Cupcake Recipe!

How many of you are on the Greek yogurt ban-wagon? I have yet to take the plunge only because I am head over heels in love with Activia…yummmm! This past Saturday, I braved the snow here in New Jersey and help my friend make these delicious vanilla cupcakes with a twist of Greek yogurt for her husband’s 40th birthday! We added some blue food coloring, sprinkles and sugar mustaches for some fun! Check out that recipe below! 😉

Vanilla Cupcakes: 12 servings
1 2/3 cups flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup sugar
1 stick of butter (melted)
2 egg whites
1/4 cup Greek yogurt
3/4 cup milk
2 tsp vanilla extract

Directions: Combine all your dry ingredients in one bowl and wet ingredients in another. Slowly add your wet ingredients to your dry ones while blending together. Line your cupcakes pan and fill about half way. Bake at 350 degrees for 20 minutes.
